La Guayabita is a take on the classic Old Fashioned. It truly highlights the star of the cocktail, cada día reposado. The flavours chosen for La Guayabita are intended to enhance the taste of the cada día reposado, to bring out its playful side, and to highlight the tequila in an approachable and appreciative way. 

Reposado pairs really well with tropical fruits, and guava felt like the perfect match to complement the vanilla and butterscotch notes found in cada día.

Spicing the guava syrup with pink peppercorns results in a unique flavour experience that lingers on your tongue in between sips. Peppercorns aren’t usually considered to be too spicy, but rather they bring about a numbing sensation to the mouth, which to me is a very unique and almost interactive experience with the cocktail. You’ll find the flavour really linger with this type of spice, and it happily brings to the surface the black pepper notes also found in cada día.

Using agave syrup to make the spicy guava syrup is a match made in heaven for cada día, as it also boasts a cooked agave flavour that is so delicious in a tequila cocktail. The angostura bitters highlight the cooked agave notes as well as the allspice and oak notes that support this tequila’s complexity.

The orange bitters and the lime zest wonderfully compliment all of the sweet and warm flavours of the principal ingredients of La Guayabita.

All in all, this cocktail is well-rounded, it sets cada día at the forefront, and it is a cocktail to be sipped and to keep you in the present as you enjoy every flavour and sensation that this cocktail brings to you

La Guayabita Ingredients

2.5 oz cada día tequila reposado
0.5 oz spicy guava syrup*
4 dashes Angustura aromatic bitters
3 dashes orange bitters (optional)
Lime zest
Dehydrated lime wheel to garnish (optional)

La Guayabita Instructions

1. In a rocks glass, add cada día tequila reposado, spicy guava syrup and bitters.
Fill glass with ice to the top and stir for 15-20 seconds.
2. Peel a piece of lime peel and express it over top of the cocktail, use it to rim the glass with its oils, then drop it in the cocktail.
3. Garnish with dehydrated lime wheel.

*Spicy Guava Syrup:

In a saucepan, add:
4 cups guava juice
3 heaping tablespoons crushed pink peppercorns
2 cups agave syrup

1. Bring to a boil on medium – high heat for 10 minutes.
2. Set aside to cool down for a few minutes.
3. Use a mesh strainer to strain syrup into a jar, bottle, or tupperware.
4. Store in the fridge for up to 7 days.
